The prefect Risotto
If you love RISOTTO, this is the perfect restaurant for you in Rome hisotrical center! The MELOTTI family started producing rice 25 years ago near Verona and now they have 3 restaurants (Verona, New York and Rome), where rice is not just RICE but an excellent risotto. Cooked in so many different ways that you are not even able to choose and would just like to order them all!! I had risotto with beetroot and gorgonzola cheese and their specialty is risotto ALL’ISOLANA. I will be back soon to try them all!

RISOTTO BASIL AND PARMESAN CHEESE
- 15 basil leaves
- 2 ice cubes
- 4 spoons olive oil
- to taste salt
- to taste black pepper
- 400 ml vegetable broth
- 170 gr rice Vialone Nano
- 35 gr Parmesan cheese
- Blend basil, ice cubes, oil, salt and black pepper.
- Bring vegetable broth to a boil the add rice, cover and let cook for about 12/13min.
- Few minutes before the end of cooking time, add blended basil, parmesan cheese and bit of olive oil. Mix and serve.
