Recipe: Pasta with zucchini blossoms and anchovies and roasted tomatoes


PASTA WITH ZUCCHINI BLOSSOMS AND ANCHOVIES

Materials

  • 200 gr pasta fusilli
  • 5 anchovies in oil
  • 10 zucchini blossoms
  • extra vergin olive oil
  • ½ onion
  • salt

On top

  • 10 cherry tomatoes
  • oregano
  • salt
  • extra vergin olive oil

Instructions

  • Put in a pan some olive oil with the anchovies and try to melt them a little with the fork.
  • Add the onion and cook for few minutes.
  • Add the blossoms and cook until they are soft. Add salt and some water if necessary.
  • When cooked blend all together.

For the top

  • Cut the tomatoes in half and place them in a baking pan facing up with some salt, olive oil and oregano.
  • Cook at 180°C for about 30min.
