Recipe: Pasta with leek, asparagus and potatoes
Leeks are a good source of vitamins A, C and K and they also contain minerals and fibers.
PASTA WITH LEEK, ASPARAGUS AND POTATOES
- 200 gr pasta mezze penne
- 1 potato
- 1 leek
- 10 asparagus
- extra vergin olive oil
- Cut into small pieces, asparagus, potato, leek and cook until very soft with some water and thyme. Add salt when they are almost cooked.
- When they are cooked, blend and add some olive oil.
- Cook pasta al dente and before you drain keep some boiling water that you can add to the sauce if it's too dense.
