Recipe: Pasta with leek, asparagus and potatoes

Leeks are a good source of vitamins A, C and K and they also contain minerals and fibers.


PASTA WITH LEEK, ASPARAGUS AND POTATOES

Materials

  • 200 gr pasta mezze penne
  • 1 potato
  • 1 leek
  • 10 asparagus
  • thyme
  • salt
  • extra vergin olive oil

Instructions

  • Cut into small pieces, asparagus, potato, leek and cook until very soft with some water and thyme. Add salt when they are almost cooked.
  • When they are cooked, blend and add some olive oil.
  • Cook pasta al dente and before you drain keep some boiling water that you can add to the sauce if it's too dense.
