Recipe: Pasta alla Norma
PASTA ALLA NORMA

Materials
- 200 gr pasta mezze maniche
- 250 gr eggplant
- 400 gr round tomatoes for sauce
- basil
- salt
- extra vergin olive oil
- sun flower seeds oil to fry
- 100 gr ricotta salata
- 1 piece garlic
Instructions
- Remove the peel and cut the tomatoes in cubes.
- Put some olive oil in a pan with the piece of garlic and heat the oil for few minutes then add tomatoes, salt and basil. Cook until there is no water left.
- Cut the eggplants in small cubes.
- Put in a frying pan the sunflower seeds oil and wait until is very warm. Add the eggplants and fry them.
- Cook pasta, drain, add the sauce and the eggplants. Grated ricotta salata on top.
