BURNT LEEK SWORDFISH SKEWERS WITH APPLE CHUTNEY ON BOILED CORAL BEANS

Materials

  • 180 gr swordfish
  • 60 gr burnt leek
  • 60 gr apple chutney
  • 10 coral beans
  • to taste icing sugar

TO MAKE THE APPLE CHUTNEY

  • 300 gr apples
  • 100 gr brown sugar
  • 80 gr apple vinegar
  • to taste salt
  • to taste olive oil
  • 10 gr ground ginger

Instructions

TO MAKE THE SWORDFISH

  • Cut the fish into strips of approx 2/3cm hight. In each skewer stick place 2 strips. Dress with oil and salt and bread with the burnt leek.
  • Warm a little bit of oil in the pan and cook the skewers approx 5/10 min.

TO MAKE THE BURNT LEEK

  • Cut the leek in thin slices and cook in the oven at 190°C with salt, oil and icing sugar until it's burnt then blend to powder.

TO MAKE THE APPLE CHUTNEY

  • Place all the ingredients in a pan until you have the right texture.
