Recipe: Basmati rice with eggplant and orange peel
Eggplants are good for lowering cholesterol. Here is an easy recipe for you!
BASMATI RICE WITH EGGPLANT AND ORANGE PEEL
- 200 gr Basmati rice
- 1 eggplant
- 1 bio orange big
- 1 tbs pine nuts
- to taste mint
- extra vergin olive oil
- Cut the eggplant into thin slices and cook in the oven for about 20/30min. with some olive oil and salt.
- When cooked, cut them into small pieces.
- Grate the orange peel.
- Boil the rice as usual and when cooked, drain well and add eggplant, orange peel, pine nuts, mint and olive oil.
- Good also at room temperature!
