Recipe: Basmati rice with eggplant and orange peel

Eggplants are good for lowering cholesterol. Here is an easy recipe for you!


BASMATI RICE WITH EGGPLANT AND ORANGE PEEL

Materials

  • 200 gr Basmati rice
  • 1 eggplant
  • 1 bio orange big
  • 1 tbs pine nuts
  • to taste mint
  • extra vergin olive oil
  • salt

Instructions

  • Cut the eggplant into thin slices and cook in the oven for about 20/30min. with some olive oil and salt.
  • When cooked, cut them into small pieces.
  • Grate the orange peel.
  • Boil the rice as usual and when cooked, drain well and add eggplant, orange peel, pine nuts, mint and olive oil.
  • Good also at room temperature!
