THE RECIPE
BURNT LEEK SWORDFISH SKEWERS WITH APPLE CHUTNEY ON BOILED CORAL BEANS

Materials
- 180 gr swordfish
- 60 gr burnt leek
- 60 gr apple chutney
- 10 coral beans
- to taste icing sugar
TO MAKE THE APPLE CHUTNEY
- 300 gr apples
- 100 gr brown sugar
- 80 gr apple vinegar
- to taste salt
- to taste olive oil
- 10 gr ground ginger
Instructions
TO MAKE THE SWORDFISH
- Cut the fish into strips of approx 2/3cm hight. In each skewer stick place 2 strips. Dress with oil and salt and bread with the burnt leek.
- Warm a little bit of oil in the pan and cook the skewers approx 5/10 min.
TO MAKE THE BURNT LEEK
- Cut the leek in thin slices and cook in the oven at 190°C with salt, oil and icing sugar until it's burnt then blend to powder.
TO MAKE THE APPLE CHUTNEY
- Place all the ingredients in a pan until you have the right texture.
